1.Beating eggs and mixing with sugar

Beat eggs at room temperature until stiff. Add sugar (from 2 to 4 tablespoons, depending on the desired sweetness) and salt. (If you add 2 tablespoons of sugar, the pancakes will not be very sweet.) Add nutmeg and mix well.

2.Adding flour and butter

Stir in baking powder and vanilla. Add vegetable oil (you can use soft butter), flour and milk. Beat until the dough becomes liquid. You can fry immediately, but it is better to leave the dough in the refrigerator overnight - this will improve the structure of the pancakes.

3.Preparing the pan and frying

Heat the frying pan over medium heat (no smoke), grease it with oil and wipe with a napkin. Pour the dough into the center - it will distribute itself.

4.When to flip pancakes

We wait for bubbles to appear on the surface and turn it over. Fry until golden brown on the other side.
