Steps

Remove any fat and gristle from chuck roast, cut into strips 1/2-inch thick by 2-inches long, and season with 1/2 teaspoon salt and 1/2 teaspoon pepper.

Melt butter in a large skillet over medium heat, then add beef and brown it quickly.

Push the beef to one side of the skillet, add the onions, and cook and stir them for 3 to 5 minutes, then push the onions to the side with the beef.

Combine the flour with the juices on the empty side of the pan. Add the beef broth and bring to a boil, stirring continuously. Reduce the heat, then stir in the mustard. Cover and simmer for 1 hour or until the beef is tender.

Five minutes before serving, add mushrooms, sour cream, and white wine and cook until heated through. Season with salt and pepper.
