Bruschetta is a traditional Italian appetizer that consists of toasted pieces of bread, usually ciabatta or loaf, that are generously spread with olive oil. The main emphasis in bruschetta is on fresh and simple ingredients.

Steps
1.Roasting pancetta
Over medium heat, fry the pancetta until golden and crispy. Then remove from heat and transfer to a bowl.
2.Preparing the vegetable mixture
Add chopped cherry tomatoes, lemon juice, red onion and coriander to the pancetta. Salt and pepper to taste. Mix all ingredients thoroughly and set aside.
3.Roasting tomatoes
Place the cherry tomatoes on the vine in a frying pan with a little oil and fry for a few minutes until soft. While the tomatoes are cooking, toast a couple of slices of bread.
4.Cooking poached eggs
Bring a pot of water to a boil over medium heat. Crack the eggs into a small bowl and carefully pour each egg individually into the pan. Boil the eggs for 2-3 minutes.
5.Assembling the bruschetta
Spoon the tomato-pancetta mixture onto the toasted bread and carefully place the eggs and fried tomatoes on top. Garnish with fresh coriander and sprinkle with black pepper. Your unusual breakfast is ready!
