Steps

Collect all necessary components.

Put the chicken, carrots, celery, and onion in a large soup pot, then add enough cold water to cover them. Heat the pot over medium heat until the water boils, then reduce the heat to low and let the mixture simmer uncovered for about 90 minutes, or until the meat falls off the bone. Skim off any foam that appears as needed.

Remove meat from the pot and let sit until cool enough to handle; chop meat into pieces, and discard skin and bones.

Strain vegetables from the stock, retaining the stock. Rinse the soup pot and return the stock to it. Chop the vegetables into smaller pieces and add them and the chopped chicken back to the pot.
