Delicate, warming chili in a light version is an excellent alternative to the classic spicy dish. Juicy chicken in a creamy sauce with white beans, sweet peppers and aromatic spices creates a light but satisfying combination of flavors. The dish is less spicy than traditional chili, but just as appetizing and warming. Ideal for those who like milder flavours.

cannellini beans, rinsed and drained

chopped green chiles

Steps
1.Step 1
Heat olive oil in a Dutch oven over medium heat. Cook chicken, onion, and garlic in hot oil until chicken is browned on both sides, about 5 minutes.

Cut the chicken into 1-inch pieces.

Put the chicken pieces back in the Dutch oven. Add chicken broth, cannellini beans, green chiles, oregano, cumin, and cayenne pepper. Simmer the mixture until the chicken is fully cooked, about 30 to 40 minutes.

Divide cilantro among 4 bowls. Ladle chili over cilantro and top with cheese.
