Dotdash Meredith Food Studios' guide on how to make non-soggy chicken parmesan, including tips like pounding the chicken to even thickness, adding parmesan to the breadcrumbs, going easy on the sauce, and ensuring the oven is hot.
skinless, boneless chicken breast halves
4 pc
salt and freshly ground black pepper to taste
pc
eggs
2 l
panko bread crumbs, or more as needed
1 cup
grated Parmesan cheese, divided
0.8 cup
all-purpose flour, or more if needed
2 l
olive oil for frying, or as needed
0.5 cup
prepared tomato sauce
0.5 cup
fresh mozzarella, cut into small cubes
0.3 cup
chopped fresh basil
0.3 cup
grated provolone cheese
0.5 cup
olive oil
2 tsp
Steps
1.Step 1
Collect the necessary ingredients. Heat the oven to 450 degrees Fahrenheit (230 degrees Celsius).
2.Step 2
Flatten chicken breasts to a thickness of 1/2-inch by placing them between two sheets of heavy plastic on a solid, level surface and firmly pounding them with the smooth side of a meat mallet.
3.Step 3
Season chicken thoroughly with salt and pepper. Evenly coat both sides of the chicken breasts with flour using a sifter or strainer.
4.Step 4
Beat the eggs in a shallow bowl and set aside. Mix the bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, and set aside. Dip a flour-coated chicken breast in the beaten eggs. Transfer the breast to the bread crumb mixture, pressing the crumbs into both sides. Repeat this process for each chicken breast. Let the chicken rest for 10 to 15 minutes.
5.Step 5
Heat 1/2 inch olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken in the hot oil until golden, about 2 minutes per side. The chicken will finish cooking in the oven.
6.Step 6
Place the chicken in a baking dish. Top each chicken breast with 2 tablespoons of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle the remaining Parmesan cheese over the top and drizzle each breast with 1/2 teaspoon of olive oil.
7.Step 7
Bake the dish in the preheated oven until the cheese is browned and bubbly, and the chicken breasts are no longer pink in the center, which will take 15 to 20 minutes. The internal temperature of the chicken should reach at least 165 degrees Fahrenheit (74 degrees Celsius) when measured with an instant-read thermometer.
