Pickled tomatoes are juicy, ripe tomatoes marinated in aromatic brine with the addition of vinegar, spices, garlic and herbs. Thanks to marinating, they acquire a rich taste with light sourness and pleasant spice.

Steps
1.Onion preparation
Place thin onion rings (2-3 rings in each) into two washed liter jars. Add garlic if desired.
2.Adding herbs and spices
Place parsley on the bottom of the jars and throw in a few black peppercorns. You can add mustard beans.
3.Preparing tomatoes
Prick clean tomatoes where they were attached to the stem with a toothpick to prevent the skin from cracking.
4.Laying tomatoes
Place the pierced tomatoes into jars.
5.Pouring boiling water
Carefully pour boiling water over the tomatoes to the top edges and cover with lids. Leave for 10 minutes.
6.Preparing the marinade
Drain the water from the jars into a saucepan to prepare the marinade.
7.Adding sugar and salt
Add 3 tablespoons of sugar and 1 tablespoon of table salt to the pan and put on fire.
8.Boiling
When the water boils, add vinegar, boil for another half a minute and turn off the heat.
9.Filling the marinade
Carefully pour the hot marinade over the tomatoes, filling the jars to the very top.
10.Twisting cans
Screw on the jars with sterile lids, turn them over and wrap them in a towel. Leave until completely cooled.
