Steps

Collect all necessary ingredients. Set the oven temperature to 350 degrees Fahrenheit (175 degrees Celsius).

Pound garlic, rosemary, salt, and pepper in a mortar and pestle to make a paste.

Pierce the meat with a sharp knife in multiple places and press garlic paste into the openings. Rub the pork loin with the remaining garlic mixture and olive oil. Place it in an oven-safe pan.

Place the pork loin in the preheated oven, turning and basting with pan liquids every 30 minutes. Cook until the pork is no longer pink in the center, which will take 90 minutes to 2 hours. Insert an instant-read thermometer into the center, and it should read 145 degrees F (63 degrees C). Remove the roast to a platter and keep it warm.

Place the pan on the stove over medium-high heat and pour the wine into it. Heat the wine and stir to loosen the browned bits from the bottom of the pan. Simmer for 3 to 5 minutes.
